Abstract
We investigated the quality characteristics of egg produced from laying hens with non-supplemented diets and diets supplementedwith organic minerals substrate of chitosan oligosaccharide or whey powder concentration. The substrate of chitosanoligosaccharide or whey powder concentration with organic minerals were mixed normal laying hen diet. Laying hens were feddiet for 45 days containing powdered chitosan oligosaccharide-Fe or whey protein concentration-Ca or normal food-additives. The egg weights, color of egg components, egg shell thickness, egg weights, bone (femur) strength and bone weights wereincreased compared to normal food-additive group (p<0.05). But, each effectiveness are different from chitosan oligosaccharidemineraland whey protein-mineral. These results suggest that organic minerals possesses the potential as supplement of layinghens diets to produce functional eggs.
