Abstract
This study aimed to evaluate the antioxidant activity of Korean raspberry (Rubus coreanus Miq.) fruits, which are grown widely in the southwest area of Korea. Freeze-dried Rubus coreanus (RC) fruits and green tea (GT) were used as sources for obtaining the water extracts (RCE and GTE). Total phenolic content of dried RC and GT were 126 ?mol CE (catechin equivalent)/g and 360 ?mol CE/g, respectively. The free radical scavenging activity of RCE and GTE were expressed as SC50 (50% scavenging capacity) and compared to each other. The scavenging activity of DPPH, superoxide and hydroxyl radicals of RC were all lower than those of GT. The inhibiting activity of AAPH-induced lipid peroxidation with RCE and GTE were also analyzed. On the contrary to the free radical scavenging activities, lipid peroxidation-inhibiting activity of RC was superior than that of GT. These results suggest that RCE contains effective scavengers of peroxyl radical than other radicals. In summary, RC contains less phenolics than GT. Although RC contains lower activities that scavenge DPPH, superoxide and hydroxyl radicals than GT, the activity that inhibits peroxyl radical-lipid peroxidation was higher in RC than GT. These results suggest RC could be used as a valuable natural source of antioxidants.
